Seasonal fruit cake

This is a very simple cake that you can have all kinds of fruit in.
I usually have seasonal fruit.

You can also have pears with blue cheese
then you should not have cardamom in the dough.
I like that it is so simple, or as it is called in French "rustique"!

You will need:
150 g butter
3 dl flour
2 tsp cardamom
1 egg
fruit of your choice

Mix butter, flour and cardamom in a food processor.
Add the egg. Wrap the dough in plastic and put it in the fridge for about half an hour.
Then you roll it out to a suitable size.
Remember to have about 6-7cm edge left.
Add the fruit, that you have mixed with a little sugar

I tend to sometimes have some lime zest, or a few drops of balsamic vinegar.
Maybe a little cinnamon? If you have cardamom in the dough then use a different flavor in the fruit

it tastes better to feel a difference between the fruit and dough.
Fold the edges and
brush with an egg, put some almonds and sugar on.
Bake at 225 ° for about 30 minutes.
Good with ice cream or whipped cream.

Have a few drops of Calvados in the cream, it brings out a the best apple flavor.

Have a nice weekend!
